I was introduced to this concept by a student of mine last year, so if you haven’t heard of it before now you’re not alone. Whether you have or haven’t, below is a short video to tell you more about it. It’s a great addition to my blog, which is dedicated not only to bringing you delicious recipes and scientifically sound nutrition information but also to examining the bigger questions of why what you eat matters. Even if you’re an omnivore with no intention of ever giving up meat, incorporating more plants into your diet—especially vegetables—is at the heart of a healthy, sustainable diet.
