On the Protein Power and Beauty of Salad

I hope you had a chance to read yesterday’s post featuring my quinoa and herb salad with blueberries, Marcona almonds, and lemon vinaigrette. That salad is glorious, and I hope you try it out soon.

It’s a good thing I and my husband loved that salad as much as we did, for I had made way too much quinoa than is reasonable for two people to consume. Thus, we basically ate variants of this salad for almost a week straight. I did try to mix it up a bit, which is why today’s piece is little more than another picture of this salad made with blackberries instead of blueberries. It’s just so pretty that I couldn’t resist. I also just wrote a guest post today on Share it Fitness about yesterday’s salad as a reminder to their readers—and now you—that you can get all the protein you need in this powerhouse of a salad, no meat required. Well, that’s all, really. Just a little more healthy food porn to liven up your Tuesday (or whatever day you’re reading this) and additional encouragement to remember beans and whole grains when trying to meet your protein needs, and maybe not only on Meatless Monday, either.
